Quinoa & Zucchini Balls

Baked quinoa and zucchini balls with a garlicky tomato-butter sauce.

Adorable little baked quinoa-zucchini balls — for the kids, for you, and for anyone demanding a garlicky tomato-butter sauce on top.

Ingredients

  • 2 medium zucchini, finely diced
  • 1 small onion
  • 3 cloves garlic
  • 1 tablespoon olive oil
  • Salt, pepper, thyme, cumin
  • 1 large cup cooked quinoa
  • ½ cup cooked, blended chickpeas (or dry breadcrumbs)
  • 1 whole egg + 1 egg white
  • Optional sauce: garlic, butter and tomato

Method

  1. Cook the zucchini, onion and garlic in the olive oil with the spices until soft.
  2. Combine with the quinoa, chickpeas and eggs in a bowl.
  3. Shape 15 balls onto a lined tray; bake at 200 °C for 13 minutes, turn, and bake 10 minutes more.
  4. Serve as is, or with a quick garlic-butter tomato sauce.
