Adorable little baked quinoa-zucchini balls — for the kids, for you, and for anyone demanding a garlicky tomato-butter sauce on top.

Ingredients
- 2 medium zucchini, finely diced
- 1 small onion
- 3 cloves garlic
- 1 tablespoon olive oil
- Salt, pepper, thyme, cumin
- 1 large cup cooked quinoa
- ½ cup cooked, blended chickpeas (or dry breadcrumbs)
- 1 whole egg + 1 egg white
- Optional sauce: garlic, butter and tomato
Method
- Cook the zucchini, onion and garlic in the olive oil with the spices until soft.
- Combine with the quinoa, chickpeas and eggs in a bowl.
- Shape 15 balls onto a lined tray; bake at 200 °C for 13 minutes, turn, and bake 10 minutes more.
- Serve as is, or with a quick garlic-butter tomato sauce.
