Ingredients
- 1 cup rinsed quinoa
- 2 cups whole wheat flour
- ¾ cup brown sugar
- 1.5 tsp baking powder
- 1 tsp salt
- ½ cup raisins
- ¾ cup skim milk
- 1 egg
- 1 tsp vanilla
Method
In a medium pot, cook your rinsed quinoa with 1 cup of water for 11–13 minutes. Meanwhile, in a separate bowl, combine the flour, sugar, salt, raisins, baking powder, and finally the cooked quinoa, and mix. In another bowl, mix the oil, milk, egg, and vanilla, then add this to the flour mixture. Divide the resulting batter between the cups of a 12-hole muffin tin arranged on a baking tray, and place in the oven. Bake the muffins for 25–30 minutes, then remove and set aside to cool. Enjoy!
