Overnight oats soaked in fresh orange juice instead of milk — said to be a favourite of Princess Diana. Cool, fresh, nourishing and quietly elegant.

Ingredients

  • 1 cup old-fashioned rolled oats
  • 1 cup freshly squeezed orange juice
  • 1 cup yogurt
  • 1 dessert spoon honey
  • 1 apple, grated with the skin on
  • 1 dessert spoon cinnamon
  • 1 tablespoon walnuts, roughly crushed
  • A handful of blueberries
  • 1 dessert spoon lemon juice (optional)

Method

  1. Mix the oats with the orange juice, cover, and refrigerate overnight.
  2. In the morning, stir in the yogurt, honey, lemon juice and cinnamon.
  3. Just before serving, top with the grated apple, walnuts and blueberries.
