The marinade that converts sworn turkey-refusers — a New Year's menu of marinated turkey breast with roasted peppers in yogurt sauce and spiced potatoes.

Ingredients
- 200 g turkey breast
- 3 charliston peppers
- 2 tablespoons strained yogurt
- 1 medium potato
- 6 cherry tomatoes
- 1 tablespoon tomato paste
- 1 clove garlic
- 1 tablespoon olive oil
Turkey marinade:
- 1 handful finely chopped parsley
- 2 tablespoons sesame oil
- 3 cloves garlic, finely chopped or grated
- 1 teaspoon thyme (fresh if possible)
- ½ teaspoon each cumin, salt and black pepper
- ¼ teaspoon each turmeric and ground ginger
Method
- Mix the marinade; slice the turkey breast thinly across the grain and marinate at least 6 hours, ideally a day.
- Pan-cook the slices until lightly golden.
- Cook the peppers (oven or pan) and dress with the yogurt, tomato paste, garlic and oil sauce.
- Cube the potato, toss with oil, thyme, cumin, salt and pepper; sauté or roast, with the cherry tomatoes alongside.
