nFit Peach Cobbler

Gluten-free, refined sugar-free peach cobbler with a crumbly oat-almond topping.

A gluten-free, refined sugar-free peach cobbler with a crumbly oat–almond topping. Works beautifully with quince or apples in winter, too.

Ingredients

  • 4–5 ripe peaches, sliced (skin on)
  • 1 tablespoon maple syrup
  • 1 dessert spoon lemon juice
  • ½ teaspoon cinnamon
  • 1 teaspoon vanilla extract
  • 1 dessert spoon cornstarch

Topping:

  • ¾ cup gluten-free rolled oats
  • ½ cup almond flour
  • 2 tablespoons maple syrup
  • 2 tablespoons coconut oil, melted
  • ½ teaspoon cinnamon and the same amount of nutmeg
  • ¼ teaspoon salt

Method

  1. Preheat the oven to 180 °C.
  2. Toss the peaches with the maple syrup, lemon juice, cinnamon, vanilla and cornstarch.
  3. Spread into a small baking dish.
  4. In another bowl, mix the oats, almond flour, cinnamon, nutmeg and salt.
  5. Add the maple syrup and melted coconut oil; rub in with your fingertips until crumbly.
  6. Scatter the topping evenly over the peaches.
  7. Bake for 25–30 minutes, until golden on top and bubbling underneath.
  8. Serve with vanilla ice cream for guests — or with coconut yogurt, the nFit way.
