The world calls it banana bread; I call it a wonderful banana cake — practical, nourishing and naturally sweetened with dates and apple juice concentrate.

Ingredients
- 3 small ripe bananas
- 2 eggs
- 1 packet (10 g) baking powder
- 1 dessert spoon peanut butter
- 1 dessert spoon date purée
- 1 cup wholewheat or oat flour
- ¾ çay bardağı (about 75 ml) hazelnut oil
- 4 tablespoons apple juice concentrate
- 1 dessert spoon cinnamon, 1 teaspoon each nutmeg and ginger
Method
- Mash the bananas and whisk with the eggs, peanut butter, date purée, oil and apple juice concentrate.
- Fold in the flour, baking powder and spices.
- Bake in a preheated oven at 180 °C until golden and a skewer comes out clean.
