Mum's Chocolate Hazelnut Cake

Sliced chocolate hazelnut cake served with a milky coffee.

A proper mum's cake — grandma's tin, Antalya air and a 1970s mixer optional. No "diet cake" pretensions: 16 slices, and one slice with a milky coffee is exactly right. What matters is portion control.

Ingredients

  • 3 eggs
  • ¾ cup sugar (brown or coconut sugar work too)
  • 1 cup yogurt
  • ½ cup olive or hazelnut oil
  • 2 packets (20 g) baking powder — two matters
  • 25 g cacao or carob powder
  • 2 cups wholewheat flour, sifted
  • 50 g dark chocolate, chopped small
  • 1 çay bardağı (about 70 g) hazelnuts, roughly crushed

Method

  1. Beat the sugar and eggs thoroughly.
  2. Add the oil and yogurt; keep beating.
  3. Fold in the baking powder, cacao and sifted flour.
  4. Stir through (or scatter over) the chocolate and hazelnuts.
  5. Pour into a greased tin and bake in a preheated oven at 180 °C for 30–35 minutes.
