Mexican Pizzas

Ingredients

  • 180 g tortilla chips (round ones work well)
  • 1 can black beans (washed and drained)
  • 1½ cups grated light cheese
  • 1 cup boiled chicken (shredded)
  • ½ red onion (cubed)
  • Juice of 2 lemons
  • ½ cup light sour cream
  • 1 bottle salsa (you can buy it ready-made)
  • Pickled jalapeños
  • Coriander
  • Parchment paper

Method

Preheat the oven to 220°C. Line a large baking tray with parchment paper and arrange the chips in a single layer. Top the chips first with the beans, then the grated cheese, then the chicken, and finally the onion cubes. Bake for 15–20 minutes, until the cheese melts. Mix the lemon juice, sour cream, and coriander in a bowl and drizzle over the chips. If you like, garnish with salsa and pickled jalapeños, then serve. Enjoy!
