A gluten-free cracker full of protein, fibre and healthy fats — a wholesome alternative to shop-bought crisps and crackers, great for lunchboxes, tea time and guests.

Ingredients
- 2 cups (about 300 g) cooked chickpeas
- 1 egg
- 1 tablespoon olive oil
- Salt, black pepper, paprika, cumin, garlic powder, turmeric, dried mint and thyme
- 2 tablespoons psyllium husk
- 2 tablespoons sesame seeds
- 2 tablespoons chia seeds
- 1 tablespoon flaxseed
Method
- Blend the chickpeas with the egg, olive oil and spices.
- Add the psyllium, chia, sesame and flax; knead into a dough.
- Shape by hand into crackers.
- Arrange on a baking tray and bake in a preheated oven at 200 °C until golden, about 20–25 minutes.
