Ingredients
- 1 medium cauliflower, broken into small florets
- A little oil and your favourite spices, for roasting
- 250 g minced meat
- 3–4 cloves garlic
- 1 small bowl preserved (winter) tomatoes
- 1 tablespoon tomato paste
- 1 dessert spoon butter
- Yogurt (optional), plenty of dried mint or chopped parsley to finish
Method
- Toss the cauliflower with oil and spices and roast on baking paper at 200 °C until tender.
- Brown the mince in a pan with the garlic.
- In a separate pan, cook the tomatoes with the tomato paste and butter, then stir into the meat.
- Plate in layers — cauliflower, meat sauce, yogurt if using — and finish with plenty of mint or parsley.
