Cauliflower nFit Mantı

Cauliflower manti with roasted cauliflower in place of the dough, under yogurt sauce.

All the comfort of mantı — practical, wholesome, filling and delicious — with roasted cauliflower standing in for the dough. Good for the brain's cravings and the gut's health at the same time.

Ingredients

  • 1 medium cauliflower, broken into small florets
  • A little oil and your favourite spices, for roasting
  • 250 g minced meat
  • 3–4 cloves garlic
  • 1 small bowl preserved (winter) tomatoes
  • 1 tablespoon tomato paste
  • 1 dessert spoon butter
  • Yogurt (optional), plenty of dried mint or chopped parsley to finish

Method

  1. Toss the cauliflower with oil and spices and roast on baking paper at 200 °C until tender.
  2. Brown the mince in a pan with the garlic.
  3. In a separate pan, cook the tomatoes with the tomato paste and butter, then stir into the meat.
  4. Plate in layers — cauliflower, meat sauce, yogurt if using — and finish with plenty of mint or parsley.
