Ingredients
- 1 cup (100 g) oats
- ¾ cup (90 g) whole wheat flour
- 1½ teaspoons baking powder
- 1½ teaspoons ground cinnamon
- ½ teaspoon nutmeg
- ½ teaspoon salt
- 2 tablespoons coconut oil or olive oil
- 1 large egg (room temperature)
- 1 teaspoon vanilla
- 2 dates (pitted, peeled and well mashed)
- 5 tablespoons light milk (room temperature)
- ¾ cup grated carrot (68 g)
Method
In a medium bowl, mix the oats, whole wheat flour, baking powder, cinnamon, nutmeg and salt. In a separate bowl, mix the coconut or olive oil, egg and vanilla, then stir in the milk. Combine the two mixtures well, then fold in the carrot and dates. Cover with cling film and rest for 30 minutes. Meanwhile, heat the oven to 160°C and line a large tray with baking paper. Divide the mixture into 15 pieces, shape into ovals and arrange on the tray. Bake for 10–13 minutes. Enjoy!
