Ingredients
- 3 cups water
- ½ cup oats
- ½ cup quinoa (any variety)
- 1 cup almond milk
- 1 tablespoon chia seeds
- 1 teaspoon vanilla
- 3 medium bananas
- 1 dessertspoon olive oil
- 1 dessertspoon brown sugar
- 1 teaspoon cinnamon
- 25 g walnuts (roughly crushed)
Method
Bring 3 cups of water to the boil in a medium pot. Add the oats, cover, reduce to medium heat and boil for 10 minutes. Add the quinoa and cook for another 10 minutes. Stir in the almond milk and cook, stirring, for 5 more minutes. Add the chia seeds and vanilla, stir, then take off the heat, cover and let it rest. Peel the bananas and slice into medium rounds. Heat the olive oil in a pan for 1 minute, add the banana slices and lightly fry each side for 1 minute. Sprinkle over the brown sugar and cinnamon and cook for about 1 more minute (if the pan gets too dry, add 1–2 tablespoons of water). Divide the grain mixture between bowls, top with the caramelised banana and walnuts, and serve. Enjoy!
