Blueberry Almond Baked Oats

Golden, just-set baked oats studded with juicy blueberries and toasted almonds — scooped warm from the dish, naturally sweet and comforting.

Ingredients

  • 160 g rolled oats
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • 2 tbsp almond butter
  • 2 eggs (or 2 flax eggs)
  • 250 ml milk of choice (I used almond)
  • 2 ripe bananas, mashed
  • 2 tbsp maple syrup (optional)
  • 100 g blueberries (fresh or frozen)
  • 30 g flaked almonds
  • Pinch of salt

Method

  1. Preheat the oven to 180°C and lightly grease a small baking dish.
  2. Mash the bananas in a large bowl, then whisk in the eggs, milk, almond butter and maple syrup.
  3. Stir in the oats, baking powder, cinnamon and salt until combined.
  4. Fold through most of the blueberries, then pour into the dish.
  5. Scatter the remaining blueberries and the flaked almonds over the top.
  6. Bake for 30–35 minutes, until golden and just set in the middle.
  7. Let it cool for 5 minutes, then serve warm — lovely with a spoon of yogurt.
