Ingredients
- 160 g rolled oats
- 1 tsp baking powder
- 1 tsp cinnamon
- 2 tbsp almond butter
- 2 eggs (or 2 flax eggs)
- 250 ml milk of choice (I used almond)
- 2 ripe bananas, mashed
- 2 tbsp maple syrup (optional)
- 100 g blueberries (fresh or frozen)
- 30 g flaked almonds
- Pinch of salt
Method
- Preheat the oven to 180°C and lightly grease a small baking dish.
- Mash the bananas in a large bowl, then whisk in the eggs, milk, almond butter and maple syrup.
- Stir in the oats, baking powder, cinnamon and salt until combined.
- Fold through most of the blueberries, then pour into the dish.
- Scatter the remaining blueberries and the flaked almonds over the top.
- Bake for 30–35 minutes, until golden and just set in the middle.
- Let it cool for 5 minutes, then serve warm — lovely with a spoon of yogurt.
