### Ingredients

- 300 g fresh sardines, cleaned, heads removed and butterflied (fresh anchovies or horse mackerel can be used instead)
- 1 can (400 g) chopped tomatoes
- 200 g cooked chickpeas, drained
- 1 medium onion, finely chopped
- 2 garlic cloves, finely chopped
- 1 tbsp extra virgin olive oil
- 1 tsp sweet paprika
- ½ tsp ground cumin
- ½ tsp salt

- 2 tbsp chopped fresh parsley

### Method

1. Preheat the oven to 200 °C (fan 180 °C).
2. Heat the olive oil in a pan over a medium heat and cook the onion for 5 minutes until soft. Add the garlic and cook for 1 minute.
3. Stir in the paprika and cumin, then add the chopped tomatoes, chickpeas, salt and black pepper. Simmer for 10 minutes until slightly thickened.
4. Pour the sauce into a baking dish and lay the sardines on top, skin side up.
